SMOKY WESTERN-STYLE PORK RIND
CASSEROLE
 
1 (7 oz.) bag crunchy fried pork rinds
1 family size can pork and beans
4 large potatoes, cubed
1 medium onion, diced fine
2 tbsp. oil
1 cup shredded cheddar cheese
1 (16 oz.) bottle barbecue sauce (your choice)
Tabasco sauce (for the adventurous!)

Fry potatoes and onions in oil until well browned. Lay out flat in a single layer on the bottom of a large casserole pan. Cover evenly with pork and beans.

Note: Sometimes one can is not enough, so it's OK to use part of a second can. We buy the pork and beans in bulk at Costco, so we always have plenty in our pantry!

Next, sprinkle half of the cheddar cheese and pour on half of the barbecue sauce. Then place the pork rinds in an even layer on top, followed by the rest of the cheese and barbecue sauce. Add Tabasco if desired, but be careful! A little goes a long, long way.

Bake in a 350°F oven for 45 minutes, or until the cheese starts to burn. (My youngest actually likes the burnt cheese, which I let him scrape from the edge of the pan when it's empty!)

Serve HOT. My boys love this meal so much we make it at least once a week. Leftovers don't last long in our house.

Serves 4 to 6, or three hungry boys!
