FESTIVE CHICKEN FAJITAS 
2 whole chicken breasts, split & skinned
2 tbsp. olive oil
1 c. green pepper strips
3/4 c. onion slices
1/4 lb. Velveeta cheese, cubed
Garlic & ground pepper to taste
4 (8") flour tortillas
Sour cream

Cut chicken into thin strips. Saute chicken in oil in large skillet. Add peppers and onions, mix lightly. Cook over medium heat 5 minutes or until chicken is tender. Add cheese and stir until cheese cubes melt.

Heat tortillas briefly in microwave oven for 5 seconds. Fill tortillas with 1/4 of chicken mixture and top with a dot of sour cream. The sour cream will help to hold the fajitas together. Serve with a salad. Double recipe as needed.

Since microwave ovens vary in power, you may need to adjust your cooking time.
