SPINACH CASSEROLE 
1 1/2 lbs. ground beef or sausage
2 (10 oz.) pkgs. frozen spinach
8 oz. can mushrooms
1/2 tsp. garlic powder
1 onion, chopped and sauteed
1/4 tsp. oregano
1 tsp. salt
1/2 tsp. pepper
1 can cream of mushroom soup
1 1/2 c. sour cream
2 c. Jack or Mozzarella cheese, sliced

Brown meat in large skillet. Lay spinach, unthawed on top of meat. Cover and let steam until mixable. Drain off liquid; mix in mushrooms, garlic powder, onion, oregano, salt and pepper.

In baking pan, mix soup and sour cream, add previous mixture. Mix to combine. Top with cheese slices. Bake uncovered at 350 degrees for 20 minutes. Serve on brown rice.
