PETE'S BAKED BEANS | |
1 lb. dry navy pea beans 1/2 lb. cubed salt pork 1 med. onion, chopped 1/3 c. brown sugar 2 tsp. salt (optional) 1 tsp. dry mustard 1/4 tsp. black pepper 1/3 c. molasses 1/2 tsp. baking soda Soak beans in 6 cups of water overnight. Parboil with baking soda for 15 minutes; drain. Rinse with cold water. Put beans and all remaining ingredients into bean pot or large casserole. Add enough water to barely cover beans. Bake with lid on for 1 hour at 400 degrees. Reduce temperature to 250 degrees and bake 2 hours. Remove lid and bake 1 more hour. Stir every hour. If beans are getting too soft, shorten cooking time. |
