POOR MAN'S OYSTER FRY (OKRA) 
1 lb. okra
2 eggs
2 c. flour (more if needed)
Salt & pepper to taste

Rinse okra and dry on paper towel. Cut inch pieces. Beat eggs with 2 tablespoons of water. Dip okra in egg mixture and roll in flour. Deep fry until golden brown, 2 or 3 minutes. (Pan frying takes longer. Must turn often.)
