FRIED OYSTERS 
One quart large oysters yields approximately 5 servings. Drain oysters thoroughly and dry lightly between 2 paper towels to remove as much moisture as possible. Sprinkle with salt and pepper. Dip oysters in mixture of 1 beaten egg with 1 teaspoon of water added. Roll in fine cracker crumbs or bread crumbs. Place in frying basket in single layer. Lower into oil heated to 360 degrees. Fry until golden brown. Turn out on brown paper bag or paper towel to drain. Serve hot.
