CHEESE CAKE SURPRISE 
1 lb. cream cheese
1 lb. sour cream
1 lb. Ricotta cheese
4 eggs
3 tbsp. cornstarch
3 tbsp. flour
1 tsp. vanilla
1 tsp. lemon juice
1 1/2 c. sugar
2 or 3 graham crackers
Fruit topping

Take 1/2 cup of sugar and blend with white of the egg. Take 1 cup of sugar that's left, blend with the egg yolks. Add cornstarch, flour a little at a time. Add lemon juice and vanilla. After beating the egg whites with the sugar add to mixture. Then add the blended yolks. Use crushed graham crackers for bottom of greased pan. Bake for 1 hour at 325 degrees. Let it cool in oven slightly open for 2 hours. Add fruit topping and enjoy.
