CARROT CAKE 
2 c. sugar
2 c. self rising flour
1 tsp. cinnamon
4 eggs
2 c. chopped black walnuts
2-3 c. raw grated carrots
1 1/2 c. Wesson oil
1 tsp. vanilla

Combine ingredients and bake in tube pan 1 to 1 1/2 hours at 350 degrees.

ICING:

2 tbsp. Karo syrup (light or dark)
1/2 c. buttermilk
1/2 c. sugar
1/2 tsp. baking soda

Mix ingredients and bring to a boil. Boil until foamy. Pour over cake while cake is still hot.
