PARSLEY FILLED MUSHROOMS 
2 baskets mushrooms (about 35)
1/2 stick butter, softened
1 c. very finely chopped parsley
1/4 c. chopped mushroom stems
2 tbsp. lemon juice
1/2 tsp. salt
Pinch of pepper
2 cloves garlic, pressed

Clean the mushrooms and remove the stems. Combine all the ingredients mixing well. Fill the mushrooms with the mixture, mounding slightly on the top. Place on a baking sheet. Bake at 375 degrees for 15-20 minutes. Serve hot.
