ZUCCHINI BREAD 
3 eggs
1 c. oil
3 tsp. vanilla
2 c. grated peeled zucchini
2 c. sugar
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1/2 c. walnuts, optional

Beat eggs until frothy; add oil, vanilla, zucchini and sugar. Mix dry ingredients together, then add to first mixture. Add nuts last. Makes two 9 x 5 inch loaves. Bake at 350 degrees for 1 hour. Makes 4 small loaves. Bake at 350 degrees for 50 minutes.
