SWEET POTATO PIE 
2 c. mashed, cooked or canned sweet potatoes
1 c. firmly packed brown sugar
1/2 c. milk
1 c. light cream
3 eggs
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground ginger
1 (11 inch) or 2 (8 inch) unbaked pie shells
Sour Cream Raisin Topping or whipped cream

In large mixing bowl combine sweet potatoes, brown sugar, cream, milk, eggs, salt, cinnamon, nutmeg and ginger. Pour into pastry shell. Bake in 350 degree oven 1 hour (bake 8 inch pies 50 minutes) or until knife inserted in center comes out clean. Serve with Sour Cream Raisin Topping or whipped cream.

SOUR CREAM RAISIN TOPPING:

Mix together: 2 tbsp. sugar 1/4 tsp. grated lemon peel 1/2 c. raisins

Chill.
