WHOLE WHEAT STUFFED ZUCCHINI 
2 med. zucchini
1/2 c. chopped onions
3 tbsp. butter
1 tomato, diced
1/2 tsp. oregano
1/2 tsp. pepper
1 tbsp. finely chopped parsley
2 c. Grape Nut flakes
1/2 c. shredded cheese

Cut zucchini in half, lengthwise. Scoop out center to make boats; dice pulp and reserve. Cook zucchini boats in boiling water for 3 minutes until almost tender; drain. Cook and stir onion in hot butter until tender but not browned. Add diced zucchini; cook until tender. Stir in tomato, seasonings, parsley, and cereal. Spoon into zucchini boats. Place in shallow baking dish. Cover and bake at 350 degrees for 15 minutes or until tender. Sprinkle with cheese. Bake, uncovered, until cheese melts, about 5 minutes.
