BUBBLE AND SQUEAK 
3 tbsp. butter
1 sm. onion
2 c. shredded cabbage
2 c. mashed potatoes
2 c. diced roast beef

In large skillet melt butter over low heat. Add onion and saute until tender. Combine cabbage, mashed potatoes, and beef. Press into skillet with fork to form large cake. Cook over medium heat until well browned. Loosen cake with spatula, slide onto plate. Flip back into skillet, uncooked side down. Cook until well browned. Cut into wedges to serve. Serves 4.
