5 to 6 med. potatoes 1/2 lb. bacon 1 med. head of cabbage Salt & pepper In a large cast iron skillet lightly brown 1/2 pound bacon cut in 1 inch pieces. Remove the bacon, pour off all grease except 2 or 3 tablespoons. Add on head of cabbage, cut in quarter inch slices and 1/2 cup of water. Cover and cook over low heat about 20 minutes. Peel potatoes, dice and add to cabbage along with bacon. Salt to taste. Cook another 10 minutes. Extra water may be added while cabbage is cooking but during the last few minutes allow mixture to brown. |
