LOW - CHOLESTEROL "MEAT LOAF" 
FOR LOAF:

1 1/2 lbs. lean ground round steak with all fat removed
1/2 to 1 c. skimmed milk
2 slices of crumbled bread
1 tbsp. prepared mustard
1 tbsp. ketchup
1 tbsp. chili sauce
Salt, pepper, garlic powder & Italian seasoning to taste

FOR SAUCE:

1/2 c. each diced celery, mushrooms, tomatoes, onions, green pepper
Salt & pepper
Garlic powder
Italian seasoning to taste
Whole green & black olives

Form ingredients into loaf. Add whole green and black olives if desired. In oven-proof pan, make sauce, using 2 to 3 tablespoons oil to saute vegetables. Move sauce to sides of pan and add loaf. Decorate with whole mushrooms and pour over the loaf, an 8 ounce can of tomato sauce. Bake in preheated oven at 400 degrees for 60 to 90 minutes, basting periodically.
