COD CREOLE 
1 onion, diced
1 green pepper, diced
2 stalks celery, diced
2 tbsp. chopped fresh parsley
3 tomatoes, chopped fine
1/2 c. dry red wine
1 bay leaf
1/4 tsp. dried oregano
2 lb. cod fillets

Combine onion, green pepper, celery, parsley, chopped tomatoes, wine, bay leaf and oregano in a saucepan. Cover and simmer for 10 minutes.

Meanwhile, arrange fish in a baking dish. Pour sauce over fish. Bake in a 350 degree oven for 30 minutes or until fish flakes easily. Add a small amount of water if needed.

Makes 6 servings.
