BLUE CHEESE DRESSING 
1 (8 oz.) carton plain low-fat yogurt
3/4 c. nonfat buttermilk
1/2 c. crumbled Blue cheese
1 tsp. cider vinegar
1/4 tsp. freshly ground pepper
1/8 tsp. salt
1 sm. clove garlic, crushed

Spoon yogurt onto several layers of heavy duty paper towels. Spread to 1/2 inch thickness. Cover with additional paper towels; let stand 5 minutes. Scrape into a small bowl, using rubber spatula. Add buttermilk and remaining ingredients; stir well. Cover and chill.

Yields 1 1/2 cups of 1 teaspoon servings.
