MEXICAN CHEESE LOG 
8 oz. cream cheese
1 lb. Velveeta
1 lb. ground beef
1 pkg. taco seasoning

Brown 1 lb. ground beef with taco seasoning (do not add water). Drain fat and set on wax paper into an oval about 10-12 inches long. Spread Velveeta with softened cream cheese. Pour taco meat onto cream cheese and roll cheese into a log. Put on platter and serve chilled with taco chips.
