CARAMEL APPLE CAKE 
1 c. chopped pecans or oatmeal or 1/2 c. pecans and 1/2 c. oatmeal
1 1/4 c. oil
2 c. sugar
3 eggs
3 c. flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. vanilla
3 c. peeled, diced apples

Mix oil and sugar. Add beaten eggs and vanilla. Add flour already mixed with soda and salt. Add nuts and apples. Put in 9 X 13 pan. Place in cold 350°F oven for 45 minutes or until toothpick comes out clean.

Icing:

1 stick butter
1 c. brown sugar
1/4 c. evaporated milk
1 tsp. vanilla

Melt butter and brown sugar over low heat. Add evaporated milk. Cook 2 minutes. Cool by beating. Add vanilla.
