OATMEAL CARAMEL APPLE CAKE 
1 1/2 c. firmly packed brown sugar
1 c. quick oats
1 c. flour
3 eggs
3/4 c. butter, softened
1 1/2 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/2 c. finely chopped, peeled apples or pears

In large mixer bowl combine brown sugar, oats, flour, eggs, butter, cinnamon, vanilla, salt, baking powder and soda; beat 3 minutes at medium speed. Stir in apples or pears. Pour into a greased and floured 13 x 9 x 2 inch pan. Bake in 350 degree oven for 35 minutes; cool completely.

FROSTING:

2 c. powdered sugar
1/4 c. butter, melted
6 tsp. milk
1/2 tsp. vanilla
1/4 tsp. cinnamon
1/2 c. chopped pecans or walnuts

In small bowl combine powdered sugar, butter, milk, vanilla and cinnamon; mix until smooth and creamy. Add chopped nuts; stir and frost.
