BRANDIED SWEET POTATOES | |
1/2 c. sugar 1/4 tsp. salt 2 tsp. corn starch 1/3 c. Grandma's unsulphured molasses (Jewel carries this brand) 1/2 c. orange juice 1/4 c. brandy 3 tbsp. butter 3 (1 lb. 2 oz.) cans sweet potatoes OR 5 to 6 sweet potatoes (par boiled, pared and cut in small sections) Mix sugar, salt and cornstarch in a heavy skillet. Stir in molasses, orange juice and brandy; add butter. Bring to a boil; add potatoes, reduce heat and simmer, uncovered, about 20 to 30 minutes, turning occasionally. Yield 12 servings. |
