MICROWAVE LEMON PIE 
Try a lemon pie in the microwave, it's really pretty and so simple. Use the instructions for your crust; add your favorite filling and top with meringue. Be sure to seal the edges. Cook on high for 2 1/2 to 3 minutes or until meringue is set. (Rotate your dish every minute to get an even cooking.) Sprinkle with some lemon peel to add a little color.

Tip: Cool your filling before adding to crust.

Make your favorite 2 crust pie (10 inch) in a glass or microwave safe pie dish. Cook on full power for 8 minutes, turning half way through cooking time. Place in preheated conventional oven (450 degrees) for another 10 minutes and your pie is done. Usually with no boil over since the fruit is cooked so quickly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
