CHEWY OATMEAL COOKIES 
2 c. flour
1 c. sugar
1 c. brown sugar
3 c. quick oatmeal
1 c. shortening
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking soda
2 eggs
1 c. coconut
1 c. chopped pecans

Cream shortening and sugars. Add eggs and mix dry ingredients then add to sugar mixture. Add oatmeal, add coconut and pecans, optional.

Drop by teaspoonful onto greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes until just turning brown. Yields: 4 to 5 dozen.
