CHEWY OATMEAL COOKIES 
2 c. oatmeal
1 c. brown sugar
1/2 c. oil
1 lg. egg, beaten
1/2 tsp. salt
1/2 tsp. vanilla
1/2 c. raisins or nuts

Combine oatmeal, brown sugar and oil. Refrigerate overnight. The next day, add the remaining ingredients to the oatmeal mixture. Mix well. Then drop mixture by tablespoonfuls 2 inches apart onto an ungreased cookie sheet. Bake 8 minutes at 375 degrees.
