BREAD PUDDING 
1 tbsp. butter
7 c. dry Italian bread crumbs
2 c. milk
2 eggs
1 c. sugar
1/4 tsp. cinnamon
1/3 c. raisins
1 tbsp. vanilla

In a 1-quart saucepan, heat milk and butter until warm. Pour over bread crumbs. In a separate bowl, mix sugar, cinnamon and eggs until well blended. Stir in raisins and vanilla. Add bread to sugar mixture and mix until well blended. Spoon mixture into greased 8-inch square baking dish. Set baking dish into a shallow pan. Pour 2 cups of boiling water into pan. Bake at 350 degrees for 50 minutes or until inserted knife comes out clean. Remove from water. Cool slightly before serving.
