MEXICAN PIZZA | |
1 (10-12) pkg. flour tortillas 2 tbsp. butter 1 can refried beans 1/2 lb. ground beef 1/2 c. taco sauce, of desired hotness 1 tbsp. chili powder 1/2 tsp. garlic salt 3/4 lb. grated Cheddar cheese 3/4 c. salsa TOPPINGS AS DESIRED: Chopped lettuce, tomatoes, black olives, hot peppers and sour cream. Brown ground beef and drain. Add refried beans, taco sauce and spices. Simmer 10 minutes. Divide tortilla shells into piles of 3 tortillas each. Coat inner sides of tortilla lightly with butter especially at edges. Place on cookie sheet in oven at 400 degrees for 5 minutes. Spread bean mixture evenly over top layer of each stack of tortilla shells. Top with salsa and grated cheese. Place in 400 degree oven until cheese is melted. Top with desired toppings. Cut and serve. Can be used as hors d'oeuvres or as a meal. Hotness can be increased or decreased by adding red pepper or juice from jalapeno peppers to bean mixture or by degree of spice in salsa or taco sauce. |
