CHICKEN CASSEROLE 
1 (3 lb.) chicken, steamed, remove from bone
1 box UNCLE BEN'S® white & wild rice (cook according to directions on box)
1/2 onion, chopped
1/2 bell pepper, chopped
1 sm. can sliced mushrooms
1 can cream of mushroom soup
1 can cream of celery soup
1/2 c. chicken broth
1/2 c. slivered almonds or water chestnuts
1 sm. jar of sliced pimento
Grated hoop or Cheddar cheese

Saute onion, bell pepper and mushrooms in small amount of butter. Cut chicken in pieces and mix together with wild rice. Add sauteed vegetables and soups. Then add broth, almonds and pimento. Top with cheese. (Salt and pepper to taste.) Put in 3 quart casserole. Bake at 350 degrees for 30-40 minutes.
