1 lg. cucumber, sliced in 1/4" thick rounds 1 med. onion, sliced in rounds 1 c. granulated sugar 1/2 c. distilled white vinegar 1 tsp. salt 1/4 tsp. celery seed 1/4 tsp. turmeric 1/2 tsp. mustard seed Mix all ingredients together in a 2 quart microwave safe bowl. Microwave on high 7 to 8 minutes, stirring twice, until cucumber is crisp tender and onion is translucent. Ladle into glass jar and refrigerate. |
