CHILI CON CARNE | |
3 tbsp. fat, bacon drippings 1 c. onion, minced 1 lb. ground beef 4 c. canned tomatoes 3 c. cooked or canned kidney beans 1 tbsp. Worcestershire sauce 2 tsp. salt 1/2 tsp. pepper 1 to 3 tbsp. chili powder Heat fat or drippings in large kettle. Add onion and beef, and cook until onion is transparent, stirring occasionally. Add remaining ingredients, adding chili powder & salt to individual taste. Cover, bring to a boil; reduce heat, and simmer until tomato pulp is well blended, 2 to 2 1/2 hours. Thicken juice, if too thin. Yield 6 to 8 servings. |
