MOLASSES GINGER COOKIES 
2 c. flour
1 tbsp. ground ginger
2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1 egg
1 c. sugar
1/4 c. molasses
3/4 c. shortening (Crisco)

Sift first 5 ingredients. Cream shortening until soft. Add sugar; beat until fluffy. Beat in egg and molasses. Blend well. Add sifted dry ingredients. Beat until well blended. Form teaspoonfuls into balls by rolling between palms of hand, smaller than a walnut. Roll in sugar. Place on ungreased cookie sheets 2" apart. Bake at 350 degrees about 8 minutes. Do not over cook. You want them soft, lightly browned on bottom. Over cooked, they become very crisp.
