MIX & MATCH FRESH FRUIT PIE 
Crust:

1/2 c. butter
1/4 c. powdered sugar
1/2 tsp. vanilla extract
1 c. flour
1/8 tsp. salt

Mix all ingredients together. Pat into pie pan.

Bake at 400°F for 15 minutes. Let cool.

Filling:

1 c. sugar
1-1/2 c. water
3 tbsp. cornstarch
3 oz. pkg. Jell-O (flavor to match berries)
1 qt. fresh fruit (peaches, raspberries, blackberries, strawberries or blueberries)
whipped cream (for topping)

Place berries into cooled pie shell. Boil water, sugar and cornstarch until clear. Add Jell-O; stir until dissolved. Let cool and pour over the berries in the cooled pie shell. Refrigerate until firm. Top with whipped cream.

This recipe is wonderful with blackberries and strawberries!
