SPINACH PIE 
2 tbsp. butter
1 c. sliced mushrooms
1 sm. onion, chopped
1 lg. clove garlic, crushed
1 pkg. (10 oz.) frozen chopped spinach, thawed and squeezed dry
3 eggs
1/4 - 1/2 c. grated Parmesan and Romano cheese
1/2 c. shredded Swiss, Cheddar or Mozzarella cheese
1 lb. Ricotta cheese (or cottage cheese)
1 tbsp. Dijon mustard
1 tsp. oregano
1 tsp. basil
Freshly ground pepper
Dash of nutmeg

Melt butter, add vegetables and saute until onions are translucent. Set aside.

Beat eggs in large bowl. Stir in cheeses, spinach, seasonings and sauteed vegetables. Pour mixture into a greased 8 inch square pan or a 9 inch quiche pan. Bake at 375 degrees for one hour or until golden brown and puffy. Serves 4-6. (A double recipe fits into a 9x13 inch baking dish.)
