PEPPERMINT FRANGOES 
2 stick butter
2 c. confectioners sugar
4 sq. bitter chocolate, melted
2 tsp. vanilla
1 tsp. peppermint flavoring
4 eggs
1 c. vanilla wafer crumbs

Cream butter and sugar until light and fluffy. Add melted chocolate gradually. Add eggs one at a time, beating thoroughly after each addition. Add vanilla and peppermint.

Sprinkle half the crumbs into 24 small cupcake liners (or in a 11 x 7 inch flat pan). Add filling. Top with remaining crumbs. Freeze until firm; serve frozen.
