PINEAPPLE CHEESE CASSEROLE 
2 lg. cans pineapple chunks
2 c. shredded cheddar cheese
1 c. sugar
6 tbsp. flour
1 tube (3 oz.) ritz crackers, crushed
4 oz. butter melted

Pre heat oven 350°F. Drain about 1/3 juice from pineapple, mix pineapple and cheese together, set aside. Mix sugar and flour; add to first mixture. Spread mixture in 9 X 13 casserole pan. Spread crushed crackers over top. Pour melted butter over all.

Bake 40 to 45 minutes. Let cook and serve. (This dish is good hot or cold, so leftovers, if you are so lucky are a snap.)
