TURKEY QUICHE 
2 1/2 to 3 c. left over stuffing or one 6 oz. pkg. chicken flavored stuffing mix
5 1/3 oz. can evaporated skim milk
1 c. chopped cooked turkey
1 c. shredded Swiss cheese
4 beaten eggs or egg substitute equivalent

If using stuffing mix, prepare according to package directions. Press leftover or stuffing into 9 inch pie plate or quiche dish, forming a crust. Bake in a 400 degree oven for 10 minutes. Meanwhile, combine meat and cheese. In another bowl beat together eggs, milk, and 1/8 teaspoon pepper. Sprinkle meat-cheese mixture into hot crust. Pour egg milk mixture atop. Lower oven temperature at 350 degrees. Bake quiche 30-35 minutes or until center is set. Let stand 10 minutes before serving. Garnish with tomato wedges, if desired. Makes 6 servings.
