SHRIMP AU GRATIN 
1 c. water
1 sm. onion, chopped
1 clove garlic, chopped
2 celery leaves
1 bay leaf
1/4 c. butter
1/4 c. flour
1 c. cream
1/4 c. white wine
1 c. Parmesan cheese
6 pepper corns
1 1/2 lb. raw shrimp
1 c. grated Cheddar
Salt & pepper to taste

In saucepan place 1 cup water, onion, garlic, celery, bay leaf and peppercorns. Cover and cook 5 minutes. Add shrimp and cook until done. Drain reserve broth.

In saucepan melt butter. Add flour. Add 1 cup of warm cream and 1 cup of broth. When sauce thickens add cheeses, wine, salt and pepper. Turn mixture into casserole. Bake at 350 degrees until bubbly.
