ZUCCHINI CAKE 
1 pkg. coconut pecan frosting mix
2 1/2 c. flour
1 1/4 c. sugar
1 tbsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
2 c. shredded zucchini
1 c. oil
1 tbsp. vanilla
3 eggs

Mix all ingredients together. Bake in bundt pan at 325 degrees for 60 to 70 minutes. Also may be baked in loaf pans or muffin pans. Bake 10 minutes for mini muffins; 20 minutes in large muffin pans.
