MARYLAND FRIED CLAMS 
1 qt. fresh shucked soft shell clams
2 eggs, beaten
2 tbsp. milk
2 tsp. salt
Dash of pepper
3 c. dry bread crumbs
Fat for frying
Tartar sauce

Drain clams. Combine egg, milk and seasonings. Dip clams in egg mixture and roll in crumbs. Fry in a basket in deep fat, 350 degrees, for 1 to 2 minutes or until brown. Drain on absorbent paper. Serve with tartar sauce. Makes 6 servings.

TARTAR SAUCE:

1 c. mayonnaise or salad dressing
3 tbsp. chopped olives
3 tbsp. chopped onion
3 tbsp. chopped parsley
3 tbsp. chopped sweet pickle or drained sweet pickle relish

Combine all ingredients and mix thoroughly. Chill.
