BREAKFAST PITAS 
1/4 c. onion, finely chopped
1/4 c. green pepper, finely chopped
1/4 c. butter
8 eggs, slightly beaten
1/4 c. milk
Salt
Pepper
8 slices cheese (Cheddar or American)
8 pitas
Other ingredients (such as sprouts; avocados, chopped; tomatoes, chopped, etc.)

In large, heavy skillet, saute onion and green pepper in butter for 3 minutes. Add mixture of eggs, milk, salt and pepper. Stir gently over low heat until eggs are set. Place cheese slices over mixture and keep on low heat until cheese is softened. Spoon into Pita halves; top with garnishes.
