PLANTATION SWEET POTATO PONE 
2 c. raw sweet potatoes, finely grated
1 c. evaporated milk
2 eggs, well beaten
3/4 c. dark corn syrup
1/4 c. (1/2 stick) butter, melted
1 tsp. grated lemon peel
2 tsp. lemon juice
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 c. brown sugar

In bowl place evaporated milk and grate potatoes into milk to prevent darkening. Add eggs, corn syrup, butter, lemon peel, lemon juice, salt, nutmeg, cinnamon and brown sugar. Pour in greased shallow baking dish 8 x 8 x 2 inches. Bake at 350 degrees for 30 minutes; stir with a fork. Continue baking 15 minutes longer or until brown and crusty on top.

Makes 6 to 8 servings.
