PAETESTA ROLL 
2 pkgs. yeast
1 tbsp. sugar in lukewarm water
9 tbsp. butter
7 c. flour
1 c. warm milk
1/2 c. sugar
1 tsp. salt
3 eggs, well beaten

Dissolve yeast and sugar in lukewarm water, add milk and three cups flour; beat until smooth. Cream butter and add eggs, salt and the rest of the flour to make a soft dough. Turn the dough onto a well floured board and roll with a rolling pin evenly until dough is 1/4" thick. Spread with filling. Roll in a jelly roll fashion, careful to leave filling distributed evenly. Place in a well greased loaf pan. Let it raise. Bake at 400 degrees for 1 hour.

PAETESTA FILLING:

Prepare while the dough is raising.
3 eggs, well beaten
1 1/2 lbs. ground walnuts
1 cube butter
1/2 can milk
Sugar to taste (about 2 lbs.)

Heat to boiling point, stirring constantly until thick. Remove from heat. If it is kept warm it will spread more evenly. NOTE: 4X filling, 3X dough. Yield: 16 loaves. For tender dough, use more yeast.
