OVEN POACHED SWORDFISH 
2 lbs. 1 inch thick swordfish steak, cut into 6 pieces
1 1/2 c. water, juice or lemon
2 tsp. of thyme
1 bay leaf
1/2 c. of lemon thyme sauce

Preheat oven to 400 degrees. Place the swordfish in a glass baking dish. Combine water, lemon juice, bay leaf and thyme; pour over the swordfish. Bake fish uncovered for 20 minutes. Remove the fish from the liquid and serve with the sauce over white rice.
