NORTH CAROLINA PINTO BEANS 
2 c. dried pinto beans
6 c. cold water
4 tbsp. onions, diced
2 tbsp. celery, diced
1/2 lb. salt pork, diced
1 sprig parsley (optional)
1 tsp. salt

Wash beans, cover with cold water and bring to a quick boil. Boil rapidly two minutes. Remove from heat; cover tightly and let stand 1 hour. Add onions, celery, salt pork, parsley and salt. Simmer for 3 hours. Yield: 6 servings.
