PINTO BEANS | |
1 c. dry pinto beans 3 c. water Look beans to get rocks and bad beans out. Wash and drain beans. Put 3 cups water over beans and turn heat up high to bring to a boil. When beans begin to boil, turn heat off, cover and let set for at least 1 hour. Drain off water. Cover with 3 or 4 more cups of water and place on medium heat. Add about 1 teaspoon salt and a 2" square of fat back. Let cook 2 to 3 hours until beans are tender. Can use about 2 teaspoons of cooking oil in place of fat back. |
