ZUCCHINI PATTIES 
1/3 c. wheat germ
1/3 c. unsifted flour
1/4 c. grated Parmesan cheese
1/4 tsp. baking powder
1/4 tsp. oregano leaves, crushed
1/8 tsp. salt
2 c. shredded zucchini (about 2 med.)
2 eggs, slightly beaten

Preheat griddle to 350 degrees. (It is ready when drops of water skitter on surface.) Combine wheat germ, flour, cheese, baking powder, oregano and salt in a bowl. Stir well to blend. Add zucchini and eggs. Stir just to blend.

Grease griddle as needed; add batter by spoonfuls onto griddle; spread to flatten slightly. Bake until golden brown, about 3-4 minutes. Turn and bake on other side about 3-4 minutes. Makes 12 small patties.
