OVEN FRIED POTATO PEELINGS | |
Serve warm with yogurt sauce for dipping. On the day before "party" bake 9 scrubbed baking potatoes in 400 degree oven for 50 minutes, until done. Slice potatoes in half, lengthwise. Scoop out most of potatoes for some other dish. Cut skins into strips 1/2" wide. Combine: 1/2 c. butter 2 cloves minced garlic 3/4 tsp. rosemary Pepper to taste Dip strips into flavored butter and place skin side down in single layer on baking sheet. Potato strips may be refrigerated overnight before dipping, or after, depending on your refrigerator space. On serving day, return potatoes to room temperature. Bake 15 minutes in 400 degree oven. Turn over and bake another 10 to 15 minutes until crisp. Drain on paper towels. Serve warm with dip. Dipping Sauce: Mix 1 cup plain yogurt with visible whey, drained off with 1/2 teaspoon rosemary (chopped fresh if available). |
