ITALIAN STUFFED POTATOES 
4 potatoes

Punch holes in potatoes and bake microwave 10 minutes. Remove, wrap in foil 5 minutes. Squeeze, slit lengthwise and fluff with fork.

SAUCE:

1/2 c. tomato sauce
1 c. zucchini
1/2 c. white onion
1/4 tsp. pepper
1 chicken breast, cooked
1 garlic clove
1/2 tsp. fennel seed
Since microwave ovens vary in power, you may need to adjust your cooking time.
