CHOCOLATE CHIP MERINGUES | |
Whites of 2 lg. eggs 3/4 c. granulated sugar 1 c. (8 oz.) chocolate chips Beat egg whites at high speed until stiff peaks hold. Beating constantly, add sugar, 2 tablespoons at a time until mixture stands in stiff, glossy peaks. Fold in chocolate chips. Drop teaspoons of meringue 1 inch apart in ungreased cookie sheet. Heat oven to 375 degrees. Put meringues in oven and turn off heat. Leave in for several hours or overnight. Remove with spatula and store in airtight container at room temperature or in freezer. Makes 50. |
