ORANGE CHOCOLATE CHIP MERINGUES 
3 egg whites, at room temperature
1/8 tsp. cream of tartar
1/8 tsp. salt
3/4 c. sugar
1 tsp. vanilla
2 tbsp. freshly grated orange rind
12 oz. tiny semi-sweet chocolate chips

Preheat oven to 300 degrees. Line 2 baking sheets with parchment paper (I use brown paper grocery bags.)

Beat egg whites, cream of tartar, and salt until soft peaks form. Slowly add sugar, one tablespoon at a time. Beat 2 minutes more. Add other ingredients. Spoon batter by tablespoonfuls or pipe it in a pastry bag. Bake 20-40 minutes until slightly brown on the tips. Makes approximately 45 kisses.
