ORANGE MERINGUE PIE | |
1 1/2 c. granulated sugar 4 egg whites 1/4 tsp. cream of tartar FILLING: 5 egg yolks 2 tbsp. lemon juice 3 tbsp. orange rind 1/8 tsp. salt 1 pt. heavy cream 3 Florida oranges To prepare meringue heat the oven to 275 degrees. Beat egg whites until foamy, add cream of tartar and beat to stiff peaks. Gradually add sugar and continue beating to very stiff peaks. Spread over a 9 inch pie plate which has been greased thoroughly - just to the edge. Sprinkle all around edge with finely chopped walnuts. Bake meringue about 45 minutes. To prepare filling beat 5 egg yolks slightly and add 1/2 cup sugar, 2 tablespoons lemon juice, 3 tablespoons grated orange rind and 1/2 teaspoon salt. Cook over boiling water, stirring constantly until thick (about 10 minutes). Fold in 2 oranges which have been cut into small pieces. Cool and fold in 1 cup whipped cream. Pour this mixture into the center of meringue, then smooth out. Chill 12 hours or longer in the refrigerator. Just before serving top with mounds of whipped cream (1 cup). Top cream with orange slices arranged in a circle and grated orange rind. |
